5-grain pumpkin teacake

Ingredients:

  • 300g pumpkin puree
  • 150g sugar
  • 100g chopped walnuts
  • 70g butter
  • 1 egg
  • 1tsp baking powder
  • 2tsp cinnamon
  • 1tsp dried ginger
  • 1/2tsp nutmeg
  • 200g crumbly cottage cheese
  • 70g butter
  • 100g powdered sugar

Cooking method:

Step
  1. Grind HERCULES 5-grain flakes into flour using a coffee grinder or blender.
  2. Put the flour from flakes into a deep bowl and combine with all other dry ingredients: sugar, baking powder, cinnamon, ginger, nutmeg. Whisk the mixture, then add pumpkin puree, egg, softened butter and knead a uniform dough. Add the chopped walnuts and mix again.
  3. Put the dough into a mold and bake in a preheated 180°C oven for 40-60 minutes. Check readiness with a wooden stick — it should come out dry.
  4. While the teacake is baking, prepare the glaze. Put the cottage cheese, butter and powder into a deep bowl and whisk everything with an immersion blender until smooth.
  5. Cool the finished teacake a little and cover with the glaze.
