Oatmeal cake with berry jelly

Ingredients:

  • 120g sour cream of soft cottage cheese
  • 1 egg
  • 2tbsp sugar
  • 1 tbsp vegetable oil
  • 140g cream cheese
  • 2tbsp honey
  • 1 sachet vanilin
  • 20g gelatine
  • 300g frozen strawberry
  • 300g frozen cherry
  • 2tbsp sugar

Cooking method:

Step
  1. Empty HERCULES pouches into a deep bowl and grind into flour with a blender. Add sour cream, egg, sugar, butter and mix until smooth.
  2. Put the dough into a high mold and bake in a preheated 180°C oven for 15-20 minutes. Check readiness with a wooden stick – it should come out dry.
  3. Defrost the berries. When the juice is released, pour the gelatine with it and let it stand to swell. Put the berries into a saucepan, add up sugar and warm up so that the juice comes out again – and bring it to a boil. If the juice does not come out at this stage, add 50 ml of water to the berries.
  4. Remove the berries from heat and cool a little.
  5. Prepare the cream: put the cream cheese in a blender cup, add vanilla, sugar, honey and blend the mixture until smooth.
  6. Add the swollen gelatin to the slightly cooled berry mass and stir until gelatine is completely dissolved.
  7. Put the cream on the baked cake, then use a spoon to lay out the berries – distribute them evenly. Pour the juice over the pie and let it stand in the fridge for 2-3 hours.

Tip: it is best to use a silicone mold with high walls to make a pie.
